Ingredients:

  • Tofu or tempeh, sliced into thin strips and marinated (optional)
  • Rice paper dipping sauce or peanut sauce for serving

Instructions:

  1. Prepare all the vegetables by washing and cutting them into thin strips. Set them aside.
  2. If using tofu or tempeh, marinate the strips in a mixture of soy sauce or tamari, sesame oil, garlic, and ginger for at least 15 minutes. Then, pan-fry or bake the tofu or tempeh until lightly golden and set aside to cool.
  3. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Remove it from the water and place it on a clean, damp surface such as a cutting board.
  4. On one side of the rice paper wrapper, place a small amount of cooked rice vermicelli noodles, followed by a layer of sliced vegetables, fresh herbs, and tofu or tempeh (if using).
  5. Fold the sides of the rice paper wrapper inward over the filling, then tightly roll the wrapper from the bottom to the top, similar to rolling a burrito. The rice paper should stick together to seal the spring roll.
  6. Repeat the process with the remaining rice paper wrappers and filling ingredients.
  7. Serve the vegetarian Vietnamese spring rolls as is or cut them in half diagonally for easier eating. They are typically served with a dipping sauce such as a rice paper dipping sauce or peanut sauce.

You can customize the fillings based on your preference and availability of ingredients. Some variations include adding cooked rice paper noodles, avocado slices, mango strips, or other vegetables and herbs that you enjoy.
